The project:
LOYA, launched in October 2022, redefines North Indian dining with a blend of tradition and innovation. It offers a culinary journey across the region, featuring ancient techniques like dhungar, slow cooking, and sigdi. The menu celebrates robust flavors, heirloom ingredients, and seasonal produce, creating dishes rooted in the traditions of warriors, tribes, and soldiers.
The beverage program, "Paanch," draws inspiration from North India’s cultural elements, showcasing inventive cocktails and low-proof drinks using botanicals and heirloom methods. A thoughtfully curated wine list complements Indian cuisine, enhancing the dining experience.
LOYA’s ambiance reflects "rustic chic" with music blending folklore and modern rhythms. Its artisanal crockery, handcrafted in regions like Khurja and Manipur, aligns with sustainable practices, including in-house water bottling under IHCL's PAATHYA initiative.
Recognized with multiple accolades, including Times Food & Night Life and HRANI awards, LOYA aspires to become a global dining destination while remaining accessible and deeply rooted in India's rich culinary heritage.
